• Turmeric powder – ¼ tsp
• Red chilli powder – 1 tsp
• Coriander powder – ½ tsp
• Cumin powder – ¼ tsp
• Fennel powder – ¼ tsp
• Mace – ¼ tsp

Method:
• Boil the eggs and halve these.
• Make the spice blend and rub the eggs carefully with this mixture.
• Heat oil in a flat pan and place the eggs, yolk side down first.
• Lightly fry both sides.
• Add curry leaves a few seconds before turning off the flame.
